While the kiddos were coring and slicing the apples, Ellen and I were chopping the rest of the apples for a huge batch of apple sauce and apple butter.
I simply wash the apples, quarter them and cook them in a bit of water. I cook them until the apples are very mushy.
I use my Foley Food Mill to turn the mush into apple sauce.
The skins, cores and stems stay in the food mill and fine milled apple sauce is all that is left. While I should probably put these in a compost pile, I toss these in the trash. Maybe one day in the future I'll be a composter, too.
For now I have a large batch of pint sized jars filled with cinnamon applesauce
And we made more than 2 dozen 1/2 pint jars of apple butter. Ellen took home a dozen and I kept a dozen. I've already given several jars away. Mmmm. Apple butter week is always such a fun week at our house. I just love it!
