Have recently also discovered a wheat sensitivity and what I missed the most was multi-grain bread. I stumbled onto Schar brand and it is soooo good! I also buy only rice flour pasta, the best so far is Tinkyada brand. Texture is as close to wheat pasta as I have found. I stay away from corn flour products because they have a "wallpaper paste" texture.
