Get a good fire going (or coals) - burn down a bit so you can place the tin foil meal on the coals.
(Make a bunch of bananas in 2 packs)
Double layer of tin foil
1 bunch bananas (about 5-7 ripe bananas)
1/2 cup of brown sugar
1 teaspoon cinnamon
1 teaspoon imitation rum flavoring (optional)
1 tub frozen Cool-Whip (I like to have it frozen - then when you serve it’s more like ice cream . If not, it’s Cool Whip)
Nilla wafers, graham crackers or animal crackers - your choice
Make a large double layer of tin foil - slice the bananas in thin discs. Sprinkle with brown sugar, cinnamon, flavoring. Seal tin foil. Place the tin foil pack on the coals. Cook on one side for about 3-4 minutes. Turn using tongs - being careful not to burn yourself. Cook on the second side for about 2-3 minutes. You really only need to cook this long enough for the sugar to caramelize. Remove from fire. Carefully open tin foil pack - watching for steam! Scoop a serving of bananas onto a plate, top with a dollop of Cool Whip and 2-3 crackers.
