2 cups white sugar
1/2 cup milk
1/2 cup butter
4 tablespoons Hershey's cocoa
3 cups quick cooking oatmeal
1 teaspoon vanilla
For the Bird Nest cookies - 1 small bag miniature jelly beans
In a large saucepan, cook sugar, milk, butter, and cocoa until it comes to a full rolling boil. Remove from heat and cool a little. Add the oatmeal and the vanilla. Stir, and then drop by spoonful on a brown paper sack and leave until firm.
*NOTE: This was my Mom's favorite cookie. It was quick and easy and we ate these frequently growing up. For Easter, Mom always put three mini jelly beans in the center of each cookie to make Birds Nests. They were beautiful and delicious. From time to time I get nostalgic and miss my Mother. When I do, these cookies hit the spot.
